From the start, this cuvée turned out to be a fresh, thirst-quenching red wine. And the 2019 vintage reaffirms this characteristic. It is one of those new wines from Cahors, which shows that Malbec is a diverse, high-quality grape variety, with which one can produce a wide variety of wines: from light and fresh to full and complex. On the nose you will find intense aromas of black fruits and spices, as well as some plant flavors such as mint and green pepper. Fresh and juicy on the palate, one almost has the impression of drinking pure grape juice, especially because the tannin structure is fine and discreet. A perfect summer wine that loves everything that is grilled: fish, meat and vegetables. In the coming months, the wine will develop into a more serious profile, in which spicy flavors and crunchy tannins will play a greater role. This is a wine for everyone and every table, at every season.
The vines of Château du Cèdre are rooted in two different soils: the first terroir, composed of stony clay and limestone, produces uncomplicated wines with fine tannins, while more powerful and denser wines come from soils composed of clay, sand and rich in pebbles.
Winemaking without added sulphites: the harvest is sorted in the vineyards and destemmed and pressed upon arrival in the cellar. 30 days of maceration with daily cap dipping (peeling). Malolactic fermentation is carried out in concrete tanks. Ripens for 12 months in 2 year old oak barrels.
