Cuvée Oeil du Temps is almost black in color with ruby red reflections. The wine has a beautiful, complex nose with aromas of hawthorn, liquorice, black currant and black fruit in balance with notes of aging. The spacious, concentrated and silky smooth mouth offers a nice fruity substance. It is refined and concentrated with smooth tannins, minerals and has a strong intensity that leads to a nice long finish.
The grapes are harvested manually, after which the grapes are placed on the sorting table and completely destemmed. Fermentation takes place in wooden barrels for 4 weeks. The wine then ages further in 1 and 2 year old oak barrels. The wine is bottled manually.
Château Mignan is located in the Minervois in the South of France. Minervois is a wine-growing region located in Languedoc-Roussillon, between the cities of Narbonne and Carcassonne. Owner Christian Mignard makes his wines from grapes grown on clay and limestone in a vineyard of approximately 20 hectares. Christian comes from a winemaker family and is involved in making the most beautiful wines for other wine companies. Château Mignan is his own creation of which he is extremely proud. A relatively young wine company, founded in 2006. The "La Livinière" part of his company is considered to be the most typical and best terroir of the Minervois.
