Description
This Rouge Cru Classé has a beautiful deep garnet color. Complex on the nose, it combines aromas of black fruit, blackcurrant, elderberry and spicy notes with liquorice and cocoa. On the palate it is harmonious with ripe tannins that cover the whole palette well. It is a mouthful with a long finish filled with mocha, coffee and a hint of laurel and ending with notes of cherry, tobacco and liquorice. It is a wine to enjoy now or to keep for 5 years. He is blissful to drink with friends and with meats with charcuterie, pot roast and spicy cheeses.
The 2019 harvest was beautiful. After a good wet winter and a generous recovery of the soil and underground water reserves, spring was mild without frost or heavy storm. These climatic conditions ensured good flowering and good fruiting. Summer was particularly dry and hot. On July 27, a heavy downpour watered our vineyard abundantly, which thanks to this water was able to function normally to complete the ripening cycle.
The terroir is complex and consists of clay and sandstone, which is colored dark red by iron oxide and is refreshed by the salty air of the Mediterranean. The soil is very permeable to water, which improves the grape quality. When the grapes are full ripe, harvesting is done by hand and part by machine. They initially harvest the grapes in the morning to maintain all the freshness of the fruit. In the basement they use a chiller when the outside temperature is too high to keep the taste in the fruit good. The grapes are stored in concrete tanks, for several days (8 to 12), for the maceration to extract as much of its flavor, but not too much tannin. Then they are pressed, clarified and fermented. The temperature is controlled in all different phases. (around 18 ° C)
