Only one grape variety is used for this Soave: Garganega. It is a fresh and fruity wine with notes of chamomile, peach and citrus, where acidity plays an important role. Garganega, a native grape variety, grows as a large cluster of medium-sized berries. The natural aromas are preserved as best as possible. To do this, Brigaldara uses cyro extraction - a partial freeze of the grapes - which protects them from oxidation and thus allows them to bring the aromatic potential of the fresh Garganega grapes into the glass. Other important elements to enhance the aromatic components of the variety are: the microclimate and the temperature of the fermentation, which is always kept below 14 ° C.
