This Bordeaux Blanc from Château Jean Faux opens with an aromatic expression of dried lemon and white flower with vegetable notes such as grass and lemongrass in the background. It has complex aromas of lime, lemon, verbena, pineapple with a beautiful purity of fruit and balanced by a lot of freshness. It goes well with fried white fish with ravigote sauce, asparagus with butter sauce, egg and capers, ceasar salad, niçoise salad and fresh, slightly sour dishes such as cheviche.
Passionate and crazy about great wines, Pascal Collotte decided to take over Château Jean Faux in 2002. From a ruin he built a small estate on the beautifully situated slopes of Sainte-Radegonde, on the left bank of the Dordogne, 5 km from Castillon-la-Bataille. With great care for the vines, this plant lover is mainly looking for the signature of the terroir. Closely controlled by Stéphane Derenoncourt, the wines, certified in biodynamics, are vinified in perfect conditions and benefit from a measured aging. Here the priority goes to balance. The wines are therefore easily digestible and easy to drink, both young and with a few years of aging.
