Vergel Blanco is pale yellow with golden reflections in color. On the nose it has aromas of ripe fruit such as peach, apricot and guava, white flowers and spices such as ginger and white pepper, combined with a hint of butter. In the mouth, the wine is powerful, broadly slightly sweet and yet fresh. It is an elegant wine that is both traditional and modern. Service temperature: 6 - 8ºC.
Vergel Blanco is the result of an assembly of old Airén vines, a Spanish indigenous grape variety, traditionally grown in Pinoso's best non-irrigated vineyards, and Sauvignon Blanc, with yields controlled (less than 0.50 kg per vine) to obtain maximum concentration and aromatic complexity.
At Vergel, all attention is focused on respecting the natural environment and terroir, using organic farming and hand picking during the cooler hours in the morning to maintain the integrity of the grapes and limit the risks of oxidation . After smooth pressing and delicate stretching of the must, fermentation is started with native yeasts to reveal the typical characteristics of the region. For aromatic expression, the temperature is checked daily. The alcoholic fermentation is followed by the process of keeping the wine on fine lees for several weeks.
