Pinot Noir has been grown in South Tyrol since 1850 and is known locally as Blauburgunder or Pinot Nero and is St. Michael Eppan's most important red wine. Producing top quality Pinot Nero is a major challenge for any winemaker as it is very demanding both in terms of soil, climate and cellar. Pinot Noir Sanct Valentin has been part of this line since 1995 and only the best and oldest vineyards have been used. Low yields and attentive care ensure a fine, sensual red wine that stands out for its balanced body and fine tannins. It has excellent aging potential. The color of the wine is ruby red. On the nose it has aromas of small berries, violets and smoked vanilla. As the wine ages, it also shows notes of porcini mushrooms and truffles. On the palate it is spicy, smooth and seductive. Ideal to combine with braised lamb shoulder or back, oxtail, ravioli or other pasta with squirrels and truffle and with strong cheeses.
The grapes grow at an altitude of 400 to 550m in various vineyards in St. Michael Eppan. Oriented to the south, southeast and southwest. The terroir consists of moraine rubble and limestone gravel. Manual harvesting of the Pinot Nero takes place in mid-September. Then follows a cold maceration (three days) with subsequent fermentation and gentle pressing. Fermentation in stainless steel tanks, followed by malolactic fermentation and aging in barrique tonneau. After about a year, the assembly takes place and after that it is aged for another six months in large oak barrels.
