This Côtes du Rhône Villages will surprise you with its deep purple color and its breadth and richness on the palate.This wine cannot hide its origin with its low vines on clay limestone soils.This aromatic wine gives us aromas of dried red fruit and balsamic vinegar and has powerful tannins.The tannins are silky smooth in the mouth and the aftertaste brings us to a whirlwind of pure fruit.This wine certainly has the potential to be stored for at least 8 years.We like to drink this wine warm on a beautiful winter day by the fireplace, but it will also taste great with beef bourguignon, stew, game and various cheeses.
The grapes are harvested entirely manually, after which they are placed on the sorting table to destalk and remove the leaf residues.Then a fermentation follows between 25 and 30 days at a temperature of 28 to 32 degrees.The wine is aged in concrete cuves for 15 to 24 months.
