Description
This is one of the most popular grape varieties in the world, and it is one of St Michael Eppan's favorites. This Chardonnay has been in the top line of Sanct Valentin since 1986. Grown only in selected micro zones of Appiano, the resulting grapes are excellent, producing a high quality and powerful, yet elegant wine. Excellent balance, well integrated acidity and great aging potential are the core characteristics of this top wine. The wine is straw yellow in color with a light green sheen. On the nose it has fruity aromas of ripe fruit and notes of smoky vanilla. In the mouth it is powerful, mineral and unforgettable. Goes well with savory dishes such as fritto misto (fried seafood), porcini mushroom ravioli with cream sauce and risotto with Graukäse and chili. It also goes well with roasted chicken and a Wiener Schnitzel.
At an altitude of 450 to 550m of premium selected vineyards in Eppan, the grapes grow southeast and southwest. The terroir consists of sandy limestone gravel. Manual harvesting of the Chardonnay takes place in mid-September. Fermentation, malolactic fermentation and development on the lees in barrique tonneaux. Assembly takes place after almost a year, followed by at least eight months of further maturation in steel tanks.
