The area around Lake Caldaro (Kaltern) has been the most important and best-known wine-growing area for the Schiava (Vernatsch) grape variety for centuries. One of the winery's most famous growing sites is the Sattel area, with a vineyard on the gentle slopes along the South Tyrolean Wine Route. It produces a harmonious, silky smooth Schiava that promises a pleasant and fruity drinking pleasure. The wine is ruby red in color. On the nose it has aromas of violets, cherries and bitter almonds. On the palate it is silky, fresh, juicy and harmonious. It is a wine that can be drunk slightly chilled as an aperitif. It also goes well with a platter with cold cuts and cheeses, for example with carpaccio and dishes with fried white fish and vegetables.
At an altitude of 420 to 680m in the vineyards of Sattel, on the hills between Appiano and Caldaro, the grapes grow, oriented to the southeast and southwest. The terroir consists of moraine rubble. Manual harvesting of the Vernatsch takes place in early October. Fermentation in stainless steel tanks, followed by malolactic fermentation and development, partly in large oak barrels and partly in steel tanks.
