Sanct Valentin Pinot Grigio was first produced in 1986 when, after selecting the first grapes from selected vineyards, it was vinified for the first time in small wooden barrels. The expressive Sanct Valentin Pinot Grigio is highly appreciated for its smoothly integrated acidity, strength and fullness. It is one of Italy's most gifted Pinot Grigio wines and promises an excellent drinking experience even after many years of aging. The color of the wine is a deep straw yellow. The fragrance has fruity aromas of apple, pear and fine vanilla. On the palate, the wine has a strong character with its pleasant acidity and nuances of toast. A real all-rounder that goes well with both fried fish and red meat, but also fits perfectly with risotto with herb pesto, for example.
At an altitude of 420 to 600m in selected vineyards in Eppan, the grapes grow southeast and southwest. The terroir consists of limestone gravel. Manual harvesting of the Pinot Grigio takes place in mid-September. Fermentation, malolactic fermentation and development on the lees in barrique tonneaux. Assembly after almost a year, followed by further maturation in stainless steel tanks for a minimum of six months.
