In 1989, Kellerei St. Michael-Eppan began producing its most famous white wine and for more than 30 years, Sanct Valentin Sauvignon thrives in selected vineyards in the excellent growing conditions at the foot of the Mendel Massif to produce a sensational wine. Characterized by seductive fruit, excellent minerality and persistence. It is not only the main wine of the Sanct Valentin line, but also one of Italy's most awarded white wines. With seductive fruit and excellent minerality and persistence, this wine is the pride of the Sanct Valentin line and one of Italy's most awarded white wines. The wine is yellow green in color. On the nose it has aromas of yellow fruit, gooseberry, elderflower and ripe red currant. In taste, it has an elegant fullness, fresh acidity and a smooth body. It is an excellent accompaniment to exclusive parties and special occasions, it goes well with fried fish such as bass with cream sauce, sole or turbot a la meuniere or with a tasty vegetable risotto.
At an altitude of 450 to 600m in selected vineyards in Eppan, the grapes grow south-east. The terroir consists of limestone soil. Manual harvesting of the Sauvignon Blanc takes place mid to late September. The majority (75%) is fermented in steel tanks, in which the wine matures on the lees until the end of April. The rest is partly fermented and matured in tonneau (15%) and partly in large wooden barrels (10%).
