Pinot blanc has been part of the premium Sanct Valentin line since 2001. Minimal yield from carefully selected vineyards speaks of the fact that a vibrant, powerful top wine is pressed from the long-underrated grape. Aged on wood, it captivates on the one hand with its strength and richness, and on the other with its clarity and mineral finesse. Its long service life is a compliment to its exceptional quality. The color of the wine is golden yellow with a green shine. It has soft aromas of apple, melon and vanilla. Velvety on the palate, fresh, concentrated and elegant. An exclusive accompaniment that goes perfectly with fish such as tuna and octopus carpaccio on potato and olive tartare and with shellfish such as grilled prawns. It also goes well with asparagus dishes and white meat such as poultry and veal fillet.
At an altitude of 450 to 600m in selected vineyards in Eppan, the grapes grow south and southeast. The terroir consists of limestone soil and clay. Manual harvesting of the Weissburgunder takes place in mid-September. Fermentation, malolactic fermentation and part (50%) development on the lees in barrique tonneaux. The rest is vinified in large oak barrels. After almost a year, the two wines are assembled and together they age for another eight months in stainless steel tanks.
