This Blanc Cru Classé has a beautiful glassy white gold color. It has a complex nose that combines fruity notes of peach, pomelo, lime and honeysuckle floral aromas. The taste is fresh, light and beautiful in all its guises with beautiful finesse in the aftertaste. It is delicious to combine with the Provencal cuisine, we immediately think of bouillabaisse with shellfish, French mussels, chicken with creamy sauce and Mediterranean herbs.
The 2020 harvest was beautiful. After a well-watered winter, when the soil and underground water supplies were generously restored, spring was mild, not a frost or heavy storm. These climatic conditions ensured good flowering and good fruit set. Summer was particularly dry and hot. On July 27, a heavy downpour watered our vineyard abundantly, which thanks to this water has been able to normally provoke to end its ripening cycle.
The terroir consists of a complex combination of clay and sandstone, which is colored deep red by iron oxide and refreshed by the salty air of the Mediterranean. The soil is very well drained which improves the quality of the grapes. The grape harvest for the Rolle started on September 8. These were picked very early in the morning to quickly return the still cold grapes to the cellars, which facilitates the smooth running of the fermentations. They use a tubular exchanger to cool the harvest in order to preserve the aromas during the pressing phase. The juice was pressed into a new Inertis press. The juices are then kept cold for several days to clarify. Fermentation then begins and continues for more than 15 days at low temperatures.
