Vacheron

The top in the biodynamic Sancerre
 
The wine estate of the Vacheron family in Sancerre has been around for 50 years. The domain covers around 50 hectares with a potential production of 400,000 bottles. Because of their uncompromising, rigorous quality criteria, they just come to half! For the extraordinary "Crus", also known as "parcelaires", there are extremely low yields of between 30 and 40 hectoliters.
All vineyards have been organic and biodynamic since 2004, under the control of Ecocert and Demeter. Vacheron is also a member of Biodyvin and they even have the American designation of the "National Organic Program".
 
Vacheron has an excellent "mix" of vineyards, partly located on the eastern hills with silex ground. The wines from these vineyards have beautiful, delicate acid, great minerality and length. The other vineyards are on the western side, where the other famous Sancerre villages are Bué, Verdigny and Chavignol. Here the substrate is less hard and has much more lime. This gives wines with a wonderfully fresh, almost "crisp" style.

At Vacheron, people are the only ones who still actively use oak to mature. People often buy used barrels, but from top domains such as Domaine de la Romanée.
