On the palate, the wine is juicy and round, with lively lemon acidity and a pronounced mineral structure reminiscent of wet pebbles. The unoaked vinification allows the freshness and purity of the Sauvignon Blanc to come fully to fruition. The finish is clear and persistent, with subtle spiciness.
Château Roquefort is located in the Entre-deux-Mers, with vineyards on the limestone plateau of Roquefort and at Castelviel, the highest point of the Gironde, where fossil oyster beds surface. The estate practices organic farming, under the technical direction of Stéphane Soubanère and winemaker Hannah Fiegenschuh.
