Domaine de Cazaban Sabotage 2024 is, in their own words, a "Blouge," a blend of white and red. This unique natural wine made from white and black Grenache opens with aromas of ripe cherry and strawberry, with a hint of floral notes and spiciness. On the palate, cherry, ripe plum, and juicy red berries.
The wine undergoes a short fermentation in stainless steel tanks at a low temperature. This ensures the fresh structure is well preserved. This results in a well-balanced wine with fine acidity and light tannins, best enjoyed slightly chilled.
This certified natural wine comes from biodynamically farmed vineyards, where the winemaker intervenes as little as possible and primarily lets nature do its work. The grapes are hand-picked and ferment "spontaneously" using their own natural yeasts. Furthermore, no sulfites or other chemical agents are added.
Domaine de Cazaban can be found on the wine lists of several Michelin-starred restaurants in France.
