The 2017 Millésime Brut Zéro “Abyss” is a blend of Chardonnay, Pinot Noir and Pinot Meunier with no dosage. After ageing on lees in the cellar, the wine undergoes a unique secondary maturation under the sea at around 60 meters depth off the coast of Brittany. This unusual process contributes to its distinctive saline, oceanic character.
On the nose it is intense and layered, showing citrus, green apple, peach, apricot and tropical fruit, combined with brioche, toasted bread, almond and a clear maritime iodine-like note. On the palate it is taut, precise and energetic with fine bubbles and a chalky mineral backbone.
The finish is long, dry and saline with an almost ocean-like tension. “Abyss” is a Champagne for those seeking extreme precision, depth and experimental winemaking, pairing beautifully with oysters, shellfish and refined seafood dishes.
