This wine comes from claystone vineyards with a high density of flint. This terroir produces fast-ripening grapes. The grapes are pressed for 2 to 3 hours and then this unfermented wine is decanted in oak barrels so that a spontaneous fermentation takes place with temperature control. The wine is bottled in the spring after being brined two or three times and fine filtered.
Aging potential: 15 years or longer in the basement.
Now cultivated by Bernard Herivault and his son, this vineyard is committed to proudly preserving the traditions of cultivation and production of their vines, resulting in tight but creamy viscous wines that display an abundance of qualities of fresh lime andfennel seeds to dry savory "flinty" tones.
