Valpolicella Ripasso Superiore originated from the refermentation of Valpolicella wine on the marcs of Amarone. After the fermentation of Amarone, the wine is separated from the marcs, which still contain substances that can release odors and aromas. Valpolicella wine is then kept in contact with the Amarone marcs for about 5 days, starting a new fermentation that enriches the structure of the wine and gives it more powerful notes that strongly characterize it. The result is a structured wine with a very balanced taste, accompanied by light hints of ripe and dried fruit that evolve as it ripens, increasing its complexity.
