This organic Cava originates from the south of the Vega del Río Magro (Valencia). Made from 100% Macabeo grapes, sourced from traditional, unirrigated vineyards (25 years old), planted in goblet-shaped vineyards on calcareous and clayey soils.
The Macabeo grapes are harvested entirely by hand in the early morning. Only the finest juice (flower must (40% yield)) is used. After natural clarification, the wine ferments in stainless steel at 16°C. The base wine then matures for 60 days on the lees, followed by tirage in January and 18 months of aging on lees in the bottle.
Dominio de la Vega is a true family business, a pioneer in putting quality wines from the small Utiel-Requena wine region on the map. The estate was established following a thorough renovation and modernization of the old Conde de Villamar winery. Conde de Villamar was built in the early 18th century by Count Ferrer de Plegamans. The winery has been restored and equipped with the latest technologies, yet with attention and respect for the ancient traditions. The traditional underground "trullos" and cisterns are now used as cellars, which remain a place of light and tranquility. In 1982, the estate began producing Cava in the area. A few years later, they were the first to bottle a high-quality 100% Bobal wine.
Dominio de la Vega is located in San Antonio Requena in the western part of the Spanish province of Valencia, at an altitude of approximately 700-900 meters. The poor, stony soils are rich in limestone and clay, resulting in low yields of high-quality grapes. The climate is Mediterranean with continental characteristics: long and cold winters, short summers, little rain, and abundant sunshine. The vineyards' elevated position and the cooling sea breeze help preserve the freshness of the wines. A truly privileged location to have a vineyard.
Dominio de la Vega produces wines and Cavas using traditional, natural methods, respecting the environment, the vineyards, and the grapes. The grapes are harvested in the dark, the coolest part of the day, preserving their freshness. After fermentation, the wines are stored, following the winery's long-standing tradition, in quiet, dark cellars where they can age in peace. The winery specializes in high-quality wines from the D.O. Utiel-Requena, each with its own distinctive, pure character. Dominio de la Vega's Cavas even received an "Excellent" rating from Robert Parker and were named "the best Cava in Spain" by associations of oenologists and sommeliers
