In the color, this Cava Brut Rosat is bright and deep pink with a violet sparkle. In the fragrance we find red berries. An intensity with notes of balsamic vinegar and ripe forest fruits. It tastes light, fresh with fruity notes. The aftertaste is pleasant and dry and persists.
What makes these Cavas from Oriol Rossell special is that they use old vines with deep-set roots that bring out a lot of flavor. They give this Cava body and depth. The grapes come from Cal Cassanyes, the domain's only vineyard at 150m above sea level. The terroir here is poor with some chalky and sandy loam. This vineyard is grown organically. The wine undergoes a short maceration to obtain the aromas and the necessary color. The fermentation is carried out at low temperature to preserve the aromas of the grapes. Then it matures in the bottle for at least 12 months.
