Benoit, a young, up-and-coming winemaker, has been allocated a total of around 7.5 hectares of vineyards by his father, Vincent Girardin. The estate is located in the picturesque village of Santenay. Where his father focused on making a limited number of wines from different vineyards, his son does it completely differently. He focuses on creating specific terroir wines, which express the unique characteristics of each vineyard
For example, he makes Savigny-Les-Beaune (only 0.6 hectares), a Chassagne-Montrachet, a white and a red Santenay and a Pommard. All extremely careful, pure and refined. Striking biodynamic detail; Benoit always bottles his bottles during a waning moon phase. In biodynamic viticulture, this is seen as the best moment for wines that still need to age, because this ensures better development and refinement.
The grapes for the Bourgogne Pinot Noir are harvested by hand, with possible sorting both in the vineyard and in the cellar. 100% are destemmed and the maceration lasts 15 days. The extraction is gentle and is done exclusively by pumping over. Indigenous yeasts are used for the fermentation. The wine is matured in French oak barrels with a rotation of four generations of barrels, for 18 months. The wine is unfiltered and is bottled during the waning moon.
