The plot of vines is located in the village of Puligny-Montrachet, towards Chassagne-Montrachet. The vines are between 55 and 60 years old and grow on deep clay soils. After manual harvesting, performed when the grapes are fully ripe, the grapes are gently pressed in a pneumatic press. The must is transferred at night and in French oak barrels, 30% of which are new oak. Fermentation starts naturally with native yeast and bacteria. After maturing for 14 months, the wine undergoes fine filtration and is then bottled by gravity.
