The Boreas of Waterkloof is named after the wind god in recognition of the hectic and cooling winds of False Bay. The Boreas is a blend of Cabernet Franc grown on weathered granite, along with Merlot, Petit Verdot, and Cabernet Sauvignon, all grown on compacted sandstone. The vineyards are dry-farmed at an altitude of 240-250 meters, some south-facing and some north-facing. This fantastic wine, already delicious and capable of aging for at least 10 years, is made only in the very best years. It is brimming with violets, graphite, and iodine, with pronounced notes of grilled red pepper, dried herbs, fynbos, and an intense, juicy, cedar-herb complexity. The tannins, however, are round and silky, yet firm enough to give all that pure fruit structure and hold. Elegant and fragrant on the palate, with a long finish that reveals excellent freshness and refinement. A very clever, well-made wine that appeals to a wide audience. Absolutely top-notch.
