Frenchman Paul Boutinot spent years searching France's top terroirs for a vineyard since 1993. He was unsuccessful (either unavailable or far too expensive). To produce top-quality wines, he had to look outside France, and in 2004, he struck gold! He purchased the southern slopes of Schapenberg, situated on False Bay in the Cape. Waterkloof was born. Although grapes had been cultivated there since 1970, Paul didn't replant the highest-yielding grapes in this coolest part of the Cape until the mid-1990s. The estate encompasses a total of 100 hectares, 56 of which are planted with biodynamically grown grapes. The remainder is managed to preserve the estate's unique flora and fauna.
